Visit Saijo, famous throughout Japan as one of the “three great” sake brewing districts. There is a reason the sake here is so good. It’s because of the water that flows deep within the grounds of this area. The water is said to contain miraculous properties in terms of medium hardness that is ideal for the brewing of sake. The water, also called Shikomi-sui is an essential ingredient in sake. You will notice that the sake from each brewery here will differ in terms of a subtle and distinct flavor, the reason being the location of the brewery and its due water composition.
Begin with a sake tasting and explanation at Kamotsuru. Over here, you will see many artifacts and learn about the brewing process. After this, you will head out for lunch to try a hot-pot dish called Bishu Nabe. Bi stands for beautiful, Shu stands for sake, and Nabe means pot. Initially, a meal that the staff cooked for themselves, now a local specialty. Learn all about it as you dissect the flavors in your mouth. Later, stroll along the picturesque streets and jump from brewery to brewery. Sample different kinds of sake and take a snack break inspired by Japanese rice wine at a local cafe. If you find a bottle of sake that you love, it will surely be available for you to purchase.
